Product Description

Roasted chicken with blazing flavors of basil pesto. The dish gives a genuine flavor of cheesy chicken and the richness of the truss tomatoes baked on top of it. A most simple and easy approach to end your day with baked chicken with pesto & cheese.

PREPARATION TIME: 15 minutes Cook Time: 35 minutes

Ingredients

  • 4 pieces of chicken breasts, boneless and skinless
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 100g basil pesto
  • 150g grated mozzarella cheese
  • 2 truss tomatoes, thick round slices
  • 100g baby spinach leaves

Preparation

  • Use a bowl and coat the chicken with olive oil.
  • Take a pinch of salt & black pepper and sprinkle it on bottom side (flat side) of each chicken breast piece.
  • Now, put the pieces side by side in a baking dish. Make sure salt and black pepper side is facing downwards.
  • Now add 1 to 2 tablespoons of the basil pesto on top of each piece.
  • Put 2 to 3 pieces of truss tomatoes slices on top of each chicken breast.
  • Spread the grated mozzarella cheese over the top of the chicken breasts.
  • Pre-heat the oven to 200°C and let it cook for 35 to 40 minutes until chicken is fully cooked and no longer pink from inside.
  • Once cooked, have it with baby spinach leaves and enjoy the flavours.

Tips

  • Preheat the oven.
  • Marinate the chicken, aleast one hour prior to baking.
  • Do not over cook the chicken and make sure chicken is not pink from inside.
  • Add salt as per your taste.
