Ingredients

  • 4 Pieces of chicken thigh and legs (with skin and bone)
  • 2 cloves garlic, fine chopped or paste
  • 1 cup fresh lemon juice
  • 4 spoons fresh lemon zest
  • 2 Tbsp fresh chopped thyme or 2 teaspoons dried
  • 2 Tbsp fresh chopped rosemary or 1/2 teaspoon dried rosemary
  • 2 cloves garlic, fine chopped or paste
  • 1 teaspoon Kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon white sugar
  • 3 Tbsp melted butter
  • Lemon slices and rosemary for garnish

Preparation

    Marinate Chicken

  • Carefully poke the chicken pieces backside (skinless) with knife or fork tip so that all the flavours marinates in properly.
  • In a big glass/non-reactive bowl, put lemon zest, lemon juice, salt, black pepper, garlic paste, thyme and rosemary and mix it well. Make sure chicken pieces are fully coated with the marinade.
  • Cover the chicken and put in refrigerator and marinate for 1 to 2 hours.


    Bake Chicken

  • Preheat the oven and set the temp to 200°c.
  • Use a baking dish, place the marinade chicken and skin side should be facing upwards. Reserve the marinade.
  • With the help of pastry brush, put the butter on each chicken piece.
  • Place the chicken in oven and after 20 minutes of baking, baste the chicken with the reserved marinade.
  • Bake it for 35 to 40 minutes in total until chicken skins are golden brown and chicken is fully cooked and juices are running clearly.
  • Once cooked, Let rest, covered in foil for 10 minutes before serving.
  • Put the chicken juices in a bowl to serve with chicken and salad.
  • Put it on top of chicken pieces or salad.
