Enjoy cooking an easy, rich & flavorful lamb served with beautifully made turmeric rice made from earthy spices. Grilled lamb with turmeric rice is delicious meal for a weeknight dinner.

PREPARATION TIME: 10 minutes Cook Time: 40 minutes

Ingredients

  • 8 Lamb ribs pieces
  • 500g basmati rice
  • 1 tsp of olive oil
  • 1 diced onion
  • 2 finely chopped garlic cloves.
  • 2 cups of fat free chicken broth
  • 1/2 tsp turmeric
  • 1 bay leaf
  • 1/2 tsp of cinnamon powder
  • 1/2 tsp of paprika
  • 3/4 tsp of kosher salt
  • 1/2 tsp of cumin powder
  • 1/8 tsp of coriander powder
  • 1/8 tsp of cardamom power
  • 1/8 tsp of red pepper powder
  • 1 fresh lime
  • 50g fine chopped fresh coriander for garnishing

Preparation

  • Heat a pan over medium heat & coat the pan fully.
  • Add onion & garlic to the pan & cook for 5mins while stirring frequently until golden brown.
  • Add the rice to the 2 cups of chicken broth with the turmeric & the bay leaf & allow it to come to a full boil. Then Reduce the heat, cover & let it simmer for 20 minutes.
  • Remove the bay leaf once cooked.
  • Prepare the grill & mix together the Kosher salt, cumin powder, cinnamon powder, paprika, coriander powder, cardamom powder & red pepper powder.
  • Brush the lamb with oil & rub it with all the mixture of all the spices.
  • Place the spiced lamb on the grill coated with cooking spray.
  • Grill for 10 minutes or more until thermometer registers to 145 to 160 C.
  • Slice the lamb into chops after waiting for 5 – 10 minutes.
  • Serve with warm turmeric rice and garnish with lime and fresh coriander.

Tips

  • Do not over cook the rice.
  • Add salt as per your taste.
